Magnesium chloride, calculated based on the weight of the anhydrous substance, consists of 74.54% chlorine and 25.48% magnesium. Anhydrous magnesium chloride is a white, glossy hexagonal crystal with a melting point of 714°C and a boiling point of 1412°C.Hygroscopicityis extremely strong, higher than that of hexahydrate and dihydrate magnesium chloride. The physical and chemical properties are basically the same as those of hexahydrate magnesium chloride. It is mainly used for the production of metallic magnesium and in the chemical, light industry, coal, construction, and other sectors.

Curing agents; nutritional enhancers; flavoring agents (used in combination with magnesium sulfate, table salt, calcium hydrogen phosphate, calcium sulfate, etc.);Japanese sakeand other fermentation aids; dehydrating agents (used in fish cakes, dosage 0.05% to 0.1%); texture improvers (used in combination with polyphosphates as elasticity enhancers for surimi products).
